Rich People Problems by Kevin Kwan - This one has the most emerald on the cover so far.

Emerald Green by Kiersten Gier - And the most obvious choice.

There you go. 5 books with Emerald Green on the covers. This turned out to be harder than I thought. Green isn't a very popular color for book covers, and Emerald in particular!
